Lamb Chops

4 lamb chops (2 inches thick)

¾ cup  pomegranate syrup

¼ cup lemon juice

2 garlic cloves, crushed

Fresh mint sprigs

 

Arrange the lamb chops in a ceramic or glass dish. In a nonmetallic bowl, combine pomegranate syrup, lemon juice, garlic cloves, and mint. Pour the mixture over lamb chops to half cover them, and let them marinate covered and chilled for 24 hours, turning occasionally. Pat the chops dry, and broil them on a rack under a pre-heated broiler or over charcoal 4 inches from the heat for 5 minutes on each side (medium-rare). Arrange the lamb chops in a heated serving dish.
